module one
Immunity Workshop

This workshop will give you a practical, holistic approach for strengthening your body’s defenses that works.

  • Food: Easily add immunity-rich ingredients into each meal of the day! Pam Anderson brings you right into her Copperhouse kitchen and shows you how to quickly, simply, and deliciously prepare nourishing foods that will be a joy to make and serve. Learn how to “Cook Without a Book” and internalize formulas like imparfait, frittata, and chopped salad that will make it easy to add immunity-rich ingredients into meal time—No need to follow a recipe.
  • Function: The best defense is a great whole food offense. Power up your natural defenses with plant-based whole foods that are rich in phytonutrients while skipping the added sugar, numbers and chemicals. Dr. Kristen Bentson will share with you a functional health approach to your immune system while teaching you about the best supplements, botanicals and foods for immunity.
  • Flow: When we reduce our stress levels, we strengthen our immunity. So, get on your mat, move with intention, and simply slow it all down. During this slow and steady practice, Laurel Attanasio will work alongside you to open up your respiratory system with some gentle backbends to strengthen the lungs and keep the nasal passage open for breathing.

Weight Workshop

This workshop will give you a practical, holistic approach to weight management that works.

  • Food: You’ll quickly be assembling hearty salads, satisfying good-for-your snacks, and learning how to cook vegetables by heart with a technique that works for every season. Pam teaches you how to get to know your body and figure out what it really needs and when. She’ll talk you through designing your own daily eating rituals, making it easier to stay on track.
  • Function: Whether you’re dining in or eating out, Dr. Bentson will help you figure out what, when and how to eat for a healthy weight as she shares her functional health approach to weight loss. Control portion distortion and momentum eating! She’ll teach you what you need to know about metabolism, what to eat when eating out, and all about organic food. Plus, she’ll talk about the gut microbiome and how it impacts your weight.
  • Flow: Join Laurel for an amazing workout that will help you to focus on building strength in key muscles. Which muscles? Your powerful legs house the largest and strongest muscles in the body. You’ll be focusing on strengthening those legs and burning calories. So, get ready for the burn, this practice will fire up all the leg muscles.

Sleep Workshop

This workshop will give you practical, holistic approaches to sleep that works.

  • Food: This kitchen lesson is all about discovering how to sear and sauce. You’ll learn from the best how to sear sleep-promoting ingredients like salmon and turkey, and to keep it simple, the same technique works for tuna, scallops and swordfish as well as beefsteaks, chicken cutlets, pork, lamb chops, and more! Quick, Easy, Effective. Pam will help you be intentional about trying new ingredients and give you the best foods for sleep.
  • Function: Dr. Bentson shares with you a functional health approach to sleep, teaches you about the best foods, botanicals, and supplements you can take to support the zzz’s and gives you 5 of her best strategies for getting to sleep and sleeping through the night.
  • Flow: Learn Laurel’s favorite yoga pose that helps her transition from day to night. Getting on your mat in the evening provides a distinct transition from day to night, from fast to slow and from movement to stillness. This yoga flow will prepare you for this transition and move you towards a restful sleep.

Stress Workshop

This workshop will give you a practical, holistic approach to stress management that works.

  • Food: Learn how to take the stress out of cooking. Assemble grab-and go-oatmeals at the beginning of the week, and you simply won’t have to think about what’s for breakfast. Make a batch of “Simple Tomato Sauce” and you’ve got the base for chili, Bolognese and Creamy Tomato Soup. Plus you’ll have an extra quart for the freezer! Stock up and then internalize Pam’s techniques and formulas, so when you open the fridge, you won’t just see a bunch of ingredients — you’ll actually see dinner!
  • Function: Dr. Bentson shares with you a functional health approach to stress management. She’ll teach you what you need to know about your HPA Axis, hormones and the stress response (we promise she’ll keep it light and interesting!), the best foods and supplements for stress and anxiety, and all about adaptogenic herbs, mind-body medicine techniques & biofeedback strategies that work for her patients and will hopefully work for you!
  • Flow: During this yoga flow you’ll work on linking your breath with your movement. This connection not only calms the nervous system it’ll force you to focus on the present moment. Because when you’re present, the stresses from the past and the future, begin to lose their impact. You’ll get onto your mat so that you can learn to shut off the ever-flowing thoughts that run through your mind.

Pam Anderson is a New York Times bestselling author of nine cookbooks, including the Julia Child Award-winning The Perfect Recipe and the James Beard-nominated first edition of How to Cook Without a Book and Perfect Recipes for Having People Over, and the IACP-nominated The Perfect Recipe For Losing Weight and Eating Great. Pam was also the former executive editor of Cook’s Illustrated magazine, USA Weekend food columnist, AARP’s official food expert, and a blogger with her two adult daughters at the popular site Three Many Cooks.

Dr. Kristen Bentson

Kristen is an author, speaker, and practitioner who consults with people around the world and locally in Bethlehem, PA. She’s the author of the Cool Girl’s Guide to the FODMAP Diet: Everything you need to get savvy about (and beat!) digestive issues ⁠— for life. She brings a fresh perspective to common conditions and firmly believes that “conditions are conditional.” Rather than focusing on disease, she focuses on the conditions causing the disease and creates protocols that empower her patients to be intentional about making lifestyle changes that will make a difference. Dr. Bentson is a doctor of chiropractic and is on staff at Lehigh Valley Health Network. She has a masters of science degree in nutrition, certification in biofeedback, and is trained in functional medicine through the Institute of Functional Medicine.

Laurel Attanasio

Laurel is a yoga gypsy who loves exploring land and sea. She has always had the travel bug, but only fell in love with yoga 11 years ago. After completing her Master’s Degree in Business, while working full-time, she knew she needed a shift mentally and physically. At that point, she stepped into a yoga class and onto her mat; yoga changed her life forever. Within a year, she completed her 200 hour training and then within another she left her job to pursue a career in yoga. Shortly after, she completed an additional 300 hours of training, a Pilates Mat training, and a Stand Up Paddle Board Yoga Training. Her passion to always learn more led her to working with Sadie Nardini. She spent hours soaking up anatomy knowledge from Sadie as well as learning the business of yoga. She had the honor of traveling the world with Sadie as her lovely sidekick for more than two years. Her teaching style encourages you to move with attention to alignment and core stability while maintaining a fluid breath cycle. Laurel’s approach allows you to progress to the next level of your practice, while using your core to find balance, stability and openness. Each yoga class is a reflection of everyday life; challenges in class will require you to maintain the integrity of your core, your true being. Laurel’s heart is rooted in her hometown of Bethlehem, PA, with her husband, Josh, and chi-weenie/sidekick, Zeek.
